Arugula, Beets, and Goat Cheese Salad


I have to share one of my favorite salads. It healthy and refreshing and so simple to make.

Ingredients:

1. Arugula Salad (Pre-Packaged Organic)

2. Beets (Buy Organic pre-cooked whole beets from Costco called Love Beets)

3. Goat Cheese (Grass Fed Goat Cheese)

4. Dried Cranberries or Cherries

5. Walnuts

Literally, cut up your beets into cubes and mix with all other ingredients. Cheese is a dairy so I use sparingly as it is inflammatory and mucus forming. Try to use organic where possible. I prepare several beets and use this salad multiple times through the week to keep my meals simple and stress-less:)

Dressing:

1/2 cup olive oil

1/4 cup white balsamic vinegar

1 whole juice of lemon or 1/2 of a large orange

1 1/2 to 2 TBS of honey

Mix and drizzle on salad. This will be almost a cup of oil so store in a glass jar for later or reduce the amounts as needed.
